Análisis técnico económico para la línea de producción de una cervecería artesanal en Ricaurte, Cundinamarca.

Abstract

La cerveza es el producto de la mezcla y procesamiento de 4 materias primas básicas: agua, levadura, lúpulo y Malta, esta ofrece variedad de texturas, sabores, colores y olores, los cuales hacen que sea conocido por su simplicidad en la elaboración y por su valor como alimento. La creciente demanda por la cerveza artesanal en Colombia y las nuevas tendencias de estilo de vida, han impulsan este mercado y su investigación. En este sentido, el desarrollo de la viabilidad técnico económica de este negocio es fundamental para darle viabilidad a este mercado a corto, mediano y largo plazo. En este proyecto se realizó un estudio técnico y económico de la Cervecería Imperial Artesanal (CIA) del Municipio de Ricaurte para identificar las diferentes condiciones operativas, técnicas y económicas de esta industria cervecera. La cervecería estudiada es viable técnicamente para la producción de cerveza artesanal con 4,7% de alcohol con extracto aparente (% E app) de 3.52, junto a una tonalidad brillante, dorada y aromas dulces. A su vez, el estudio económico concluir que con la productividad actual (150 L de cerveza artesanal por mes) la cervecería no es económicamente viable (TIR negativa, VAN de - $ 9.679.358 y pérdidas de $ 9.727.504 pesos m / c al año). Finalmente, para obtener una viabilidad económica de la cervecería se recomienda aumentar el mercado de esta cerveza artesanal enfocándose en los municipios aledaños, permitiendo aumentar la capacidad de producción a un mínimo de 300L / mes.

Beer is the product of the mixing and processing of 4 basic raw materials: water, yeast, hops and malt. It offers a variety of textures, flavors, colors and smells, which make it known for its simplicity in brewing and for its value as a food. The growing demand for craft beer in Colombia and new lifestyle trends have driven this market and its research. In this sense, the development of the technical and economic feasibility of this business is fundamental to make this market viable in the short, medium and long term. In this project, a technical and economic study of the Imperial Craft Brewery (CIA) of the Municipality of Ricaurte was carried out to identify the different operational, technical and economic conditions of this brewing industry. The brewery studied is technically viable for the production of craft beer with 4.7% alcohol with an apparent extract (% E app) of 3.52, together with a bright, golden color and sweet aromas. In turn, the economic study allowed concluding that with the current productivity (150 L of craft beer per month) the brewery is not economically viable (negative IRR, NPV of -$9,679,358 and losses of $9,727,504 pesos m/c per year). Finally, in order to obtain economic viability of the brewery, it is recommended to increase the market for this craft beer by focusing on the surrounding municipalities, allowing to increase the production capacity to a minimum of 300L/month.
